Now I'm all about saving, when and where I can, so it' s not unusual for me to hit 2-3 markets on grocery day. Yesterday was no exception.
My favorite "discount" market is Aldi's. I don't want to say 'cheap,' but their items border on the inexpensive. I also don't want to give the impression that I buy all my foodstuffs/household items there because I don't. Some of their items are more ' purchase-worthy,' than others, and I've learned the difference. Hence, I shop other stores as well.
I had a sweet tooth, and decided to make a cake. Aldi's cake mixes are .99. I figured I'd mix up the cake, possibly add some vanilla extract, add a vanilla, butter rum or caramel glaze, and I'd be 'cooking with oil,' so to speak.
The yellow cake mix that I picked up had a recipe for a "Gooey Butter Cake" on the back. Just what I wanted!
The recipe is pretty easy, maybe not so easy that 'even a cave man could do it," but you get my drift...
MAKING THE CAKE
For the cake batter: You take yellow cake mix, add 1 egg, and 8 tablespoons (1 stick) melted butter or margarine. Combine the ingredients, mix well. Pat the mixture in the bottom of a lightly greased 13"x9" pan. For the filling: Cream one softened, 8 oz. package of cream cheese. Add 1 stick melted butter or margarine, one 16 oz. package confectioners sugar, 2 eggs, and 1 teaspoon vanilla. Mix well, spread filling over cake batter. Bake@ 350 for 40-50 minutes. The center of the cake should be a little gooey. And the cake itself? Rich, buttery, and SINFULLY DELICIOUS! I even had the nerve to add 2 scoops of vanilla ice cream. It was soooo... good! I can feel my waist and tummy growing exponentially just typing about it!!
I'd imagine any yellow cake mix would suffice, but why spend more, when you can get the same with less?
